Directions

  • 1 Preheat oven to 375ºF.
  • 2 On a clean surface, open chicken thighs and stuff with a slice of feta and 1 reserved basil leaf. Gently close each side of the chicken over each other. Wrap 1 bacon slice around the stuffed chicken, beginning at one end of the chicken, until it is completely wrapped. Use a toothpick to secure if needed. Place on oven-proof baking dish.
  • 3 Repeat this step until all chicken thighs have been stuffed and wrapped.
  • 4 In a saucepan, heat olive oil and medium heat. Add garlic and tomatoes. Cook over medium heat, stirring occasionally, for about 10 minutes or until the sauce begins to thicken. Add remaining basil and stir to incorporate.
  • 5 Once done, spoon sauce over bacon-wrapped chicken thighs, making sure every piece is coated. Cook in oven for 30-40 minutes, or until done.
  • 6 Serve immediately.
