Ingredients

  • 6 slices bacon, not precooked
  • 6 slices bread
  • 6 eggs
  • Salt and pepper, to taste

Directions

    Preheat the oven to 400 °F. Spray a muffin pan with non-stick cooking spray.

    In a frying pan, cook the bacon for 3-5 minutes, or until slightly cooked but not crispy. Remove from pan and arrange strips on paper towel-lined plate.

    With a round cookie cutter or a cup, cut the slices of bread into rounds for use as the muffin bases. Cut the rounds to size of the muffin pan.

    Set the bread rounds in the bottom of the muffin tin and line the sides of each muffin with bacon, to form a kind of “bacon cup” with a bread base.

    Crack open an egg over the top of the bread round, being careful not to break the yolk.

    Once all muffins have been prepared, bake for 15 minutes or until the eggs are cooked to your liking and the bacon crispy.

    Season with salt and pepper to taste and serve immediately.

    To give the muffins even more flavor, add a layer of shredded cheese between the bread and the egg.

    Try using turkey bacon in place of the pork bacon.
