Ingredients

  • 1 can (14.5 oz) Muir Glen™ organic stewed tomatoes, undrained
  • 1/2 cup chicken broth
  • 1/4 cup tomato puree
  • 1/2 white onion, cut in half
  • 2 cloves garlic, peeled
  • 1 chipotle chile in adobo sauce (from 7-oz can)
  • 2 teaspoons tomato bouillon with chicken flavor granules
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 3 box (9 oz each) frozen baby lima beans

Directions

    In blender, place tomatoes, chicken broth, tomato puree, onion, garlic, chile, bouillon, and salt. Cover; blend on high speed, 30 seconds to 1 minute, until mixture is almost smooth.

    In 3-quart saucepan, heat oil over medium heat. Carefully add blended sauce; cook uncovered about 5 minutes, stirring occasionally. Stir in lima beans. Cook 6 to 10 minutes, stirring occasionally, until lima beans are tender and flavors are blended.
