Paninis are an obsession of mine. I love mixing my favorite ingredients, especially veggies, and placing them on the grill. A panini is a sandwich made with Italian bread like ciabatta, rosetta or baguette. The bread is cut horizontally and filled with ingredients like salami, ham, cheese, mortadella and more. Directions

  • 1 Preheat the grill or pan on medium heat. Cut the bread horizontally.
  • 2 Place the slices of avocado on the bread and then the tomatoes. Season with salt and pepper.
  • 3 Cut the mozzarella cheese and place on top of the tomatoes.
  • 4 Pour the pesto over the cheese.
  • 5 Cover the ingredients with the other half of the bread and apply pressure to the sandwich. Use a kitchen brush to moisten the sandwich with olive oil.
  • 6 Place the panini on the grill until the bread has toasted and the cheese has melted, about 5 minutes.
  • 7 Cut the panini and serve immediately.
