Avocado, Strawberry and Cucumber Salad

This salad is amazing! I hadn’t realized that fruits and salads are an outstanding combination until just a little while ago. Now I try to add a special touch every time I prepare one. This recipe can be personalized to your liking. Feel free to add another type of fruit like peaches or kiwis. You can also use caramelized pecans instead of almonds or even add little pieces of grilled chicken. Enjoy!

Ingredients

  • 1 English cucumber (hot house cucumber), washed
  • 1 cup strawberries, washed and chopped in half
  • 1 cup avocado, peeled and diced
  • 2 tablespoons olive oil
  • 2 teaspoons red wine vinegar
  • Salt and pepper to taste
  • 1/2 cup almonds, sliced

Directions

    Remove the tips of the cucumber and slice it in a spiral form using a spiral mandolin.

    Mix the cucumber, strawberries and avocado in a salad bowl.
  • 3
    Mix the olive oil and vinegar in a small bowl. Season with salt and pepper to taste.

    Add the vinaigrette and mix well. Sprinkle with almonds and serve immediately.
