Avocado, Jalapeño and Cheese Mexican Torta

I remember when my family and I would travel to Mexico and visit the famous torta stand in my hometown. I still remember the smell of the fresh bolillo bread behind the counter, ready to be sliced and stuffed with all kinds of meats and vegetables. I couldn't wait to taste what has been my favorite torta combination of all time: avocado, cheese and jalapeno. The torta stand is long gone, but my cravings for those simple, delicious yet quick sandwiches are not. So here's my homemade rendition!

Ingredients

  • 4 Mexican bolillo breads
  • 4 tablespoons mayonnaise
  • 2 avocados, peeled and sliced
  • 5 oz queso fresco or queso panela
  • 1 (7-oz) can sliced and pickled jalapeños

Directions

  • 1
    Slice each bolillo bread in half, lengthwise.
  • 2
    Spread mayonnaise on each slice.
  • 3
    Place 1/4 avocado slices on each bollilo.
  • 4
    Top the avocado with cheese and jalapenos. Serve and enjoy!
