One of the most exciting aspects of cooking is the reward you get for thinking out of the box. That reward is delicious food. Avocado is an ingredient that some people only associate with guacamole, or as an accompaniment to a sandwich or salad. However, avocados stand up well to cooking if they are prepped correctly. Here is a novel idea for an appetizer.

Ingredients

  • 2 Hass avocados
  • 1 egg
  • 1 cup of milk
  • Slice of cucumber and cilantro leaves to decorate
  • Peanut oil for frying (can use canola but is preferred to use peanut oil for better results)

For the breading:

  • 1 1/2 cups of bread crumbs (preferably Italian style)
  • 2 teaspoons of garlic powder
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon cracked black pepper

For the dipping sauce:

  • 1/2 cup of olive oil based mayonnaise
  • 1 lime (juiced)
  • 2 tablespoon of Sriracha sauce (hot chili sauce made from sun ripened chilies and garlic, very popular in Thai food; can be found in the supermarket under ethnic foods section)
  • Pinch of cumin and black pepper

Directions

    For the breading: Combine all ingredients in a bowl; this is the breading combination you will need to dip the avocados.

    For the dipping sauce: Combine all ingredients and taste, you can reduce the amount of hot sauce if you like it less spicy. Refrigerate until ready to serve.

    Use ripe avocados, making sure they are not too soft; need avocados to be hard enough to bread and fry. Cut avocados, take pit off and peel; cut into thick long strips; set aside. In bowl combine egg and milk; beat until well combined.

    Soak avocados in this preparation and then bread once. Take the breaded avocados one by one and soak them again in the egg and milk batter and bread again. Place in the freezer for about 10 minutes. You have to bread twice and freeze to assure avocados will not fall apart when frying.

    On deep fryer pan over high heat peanut oil, when it reaches the proper temperature and with care stir in avocado breaded slice until golden brown. Do not place more than 3 slices per batch; for better results. Place fried avocado slices in a paper towel to remove excess oil.

    Serve in a nice tray, accompany with spicy mayo dipping sauce. This is a different approach to serve a tasty and comforting appetizer.

    You will need 20 minutes to prepare, still very quick and easy; if you have leftovers you can add to your sandwich or salad wrap for next day’s lunch.
