For Frosting:

cup of fresh grated lemon peel

Directions

  • 1 Heat the oven at 350°F; place the cupcake liners on a regular size cupcake pan. With an electric mixer add the mashed avocado to a large bowl and the milk; mix together, when ready. Stir in eggs and cake mix. Beat until getting a smooth and consistent cake batter. Spoon the preparation in each cupcake liners and bake until golden brown for about 20-30 minutes. Remove from oven and place in a wire rack until cold.
  • 2 Remove frosting from refrigerator and stir in a third of the grated lemon peel, combine well. Place inside a piping bag and use a thick tip, to decorate the cupcakes.
