Directions

  • 1 Chop the zucchini lengthwise and lay it on a baking tray. Drizzle with olive oil and season with salt and pepper. Bake for 10 minutes until the zucchini is golden brown.
  • 2 Cut the rolls in half. Spread refried beans on each slice.
  • 3 Place the rolls on a baking tray. Sprinkle with some cheese.
  • 4 Bake in the oven at 350°F for 15 minutes or until the cheese has melted.
  • 5 Once the rolls are ready, add the zucchini and avocado. Serve immediately.
