Expert Tips

Use or substitute with your choice of cheeses. Remember every recipe can be made according to your family’s preference.

The combination of certain ingredients may initially seem odd. That’s the case of asparagus and three different types of cheese. What’s interesting about this recipe is that it blends a series of flavors and textures to result in a simple, easy and quick dish - without much difficulty! It’s a great alternative for treating unexpected guests, and doesn’t take too long to prepare.

If you wish, add cherry tomatoes and scallions.

Directions

  • 1 Place the rack in the center of the oven. Preheat the oven to 400°F.
  • 2 Unroll and stretch the pie crust. Place it in the tart pan (rectangular, 8x11 1/2 inches). Prick the dough with a fork to keep the center from puffing up. Cook for 15 minutes. Remove from the oven and set aside.
  • 3 Hold the asparagus by the ends and peel the stalks with a potato peeler.
  • 4 In a medium pot, heat up 6 cups of water with the salt. When it comes to a boil, add asparagus. Cook for 3 minutes, remove and drain very carefully so they don’t fall apart.
  • 5 Add cheeses to the previously cooked tart. Arrange the asparagus; if possible, make two or more layers, depending on the depth of the pan. Sprinkle with more cheese and put it in the oven for about 15-20 minutes, until the cheese melts.
  • 6 Let it cool at room temperature, unmold and serve warm. Be very careful when you take it out of the oven.
