The Asian pear is delicious when it’s fresh but it’s also great for baking. This upside down cake is easy to make and is has a very beautiful presentation. The taste is delicate and cake itself is quite spongy. Perfect with a cup of coffee or to serve for brunch.

Ingredients

  • 1 cup brown sugar
  • 1/2 cup or 125 grams of butter
  • 3 Asian pears
  • 1 1/2 cup plain flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 3/4 cup olive oil
  • 4 eggs
  • 1 teaspoon vanilla
  • 3/4 cup natural Yoplait® Greek yogurt

Directions

    Place the brown sugar and butter in a small pot over medium heat, and stir until the butter and sugar has dissolved.

    Stop stirring and cook for 5 more minutes.

    Carefully pour this caramel mixture into a round 8" mold, don't use the kind with the detachable ring because the caramel can drain out.

    Wash and peel the pears and cut them into 1/4" thick slices. Arrange them in a flower pattern over the mixture in the mold, starting from the border.

    Preheat the oven to 320° F.

    Mix the flour, cornstarch, baking powder and salt in a large bowl. Stir several times with a fork.

    Mix the sugar, oil and eggs (one by one) in another large bowl. Add the vanilla and beat thoroughly.

    Add half of the flour and cornstarch mixture. Stir with a wooden spoon or spatula. Add the yogurt and mix.

    Add the rest of the flour mixture. Stir until achieving a consistent mixture.

    Pour the mixture over the pears and smooth out the surface.

    Bake for 60-65 minutes or until it’s golden brown and a toothpick comes out clean after penetrating the center.

    Let cool on a rack for 15 minutes.

    Flip over onto a serving dish.

    Serve warm or at room temperature.
