Arroz árabe, as it's known in Chile, exists in many different versions throughout the Americas and it doesn't surprise me at all! It's so delicious and can be served as a side to fish, pork, or beef… it goes well with everything!

Ingredients

  • 1 tablespoon of oil
  • 1/2 cup of uncooked angel hair noodles
  • 2 cups of long grained white rice (like Jasmine rice, for example)
  • 4 cups of boiling water or broth
  • 1 teaspoon of salt (omit if you use broth)
  • 1/2 cup of purple raisins

Directions

  • 1
    Heat 1 tablespoon of oil in a large pot over medium heat. Add the raw noodles and cook them until golden brown, for 1-2 minutes. Add the rice and stir well.

    Add 4 cups of broth or boiling water with 1 tablespoon of salt. Omit salt if using broth. Add the raisins. Stir.

    Cover and let cook at low heat for 20 minutes or until all the water has evaporated.

    Separate the rice with a fork and be sure that it’s cooked. Stir and serve hot.

Expert Tips

  • tip 1
    You can use already cooked rice. After the noodles brown, add the cooked rice and the raisins (let soak for 10 minutes in boiling water). Heat everything together and serve.
  • tip 2
    The noodles should be golden brown, but don’t let them burn as this would ruin the dish.
