Argentine Atún Empanadas

Vigil empanadas are traditional fare during Easter, when people stop eating red meat and tables see a wide variety of fish and vegetable based dishes. Among all of the varieties, tuna empanadas are one of South America's delights. They are simple to prepare, and following the steps I’m sharing here, yours will be a guaranteed success. I love their flavor and the fact that it’s a good opportunity to incorporate fish into my family's diet. I hope you enjoy them!

Ingredients

  • 2 tablespoons oil
  • 1 onion, chopped
  • Salt and pepper to taste
  • 4 cans (5oz each) tuna
  • 1 tomato, crushed
  • 10 empanadas tapas (discs) for baking (preferably puff pastry dough)
  • 1 egg, beaten

Directions

    Heat oil, then add onions to the pan; add salt and pepper to taste. Cook on medium heat for 5 minutes or until the onions are tender.

    Turn off heat. Add tuna and crushed tomato. Mix to allow the flavors to blend.

    Let it stand and cool.

    Preheat the oven to 350°F for 10 minutes.

    In each disc, place 1 tablespoon of tuna mix. Close by pressing the borders with fork or your hand.

    Place the empanadas on a cookie baking tray.

    Brush the top of the empanadas with beaten egg.

    Lower the oven's temperature to medium (about 300°F).

    Bake the empanadas for approximately 15 to 20 minutes or until empanadas are golden brown.

    Even though you can make tuna empanadas with any kind of disc, the ones made especially for baking are the puff pastry dough kind, which taste so much better.
