A perfect two-bite dessert, these mini apple pie pops are a recipe for any day of the week. Growing up, homemade apple pie recipes took a long time to make and were reserved for special occasions. With this recipe you won't take that long and you don't really have to wait for an important celebration to serve these pops!

Ingredients

  • 1 tablespoon butter
  • 1-2 medium apples, peeled and cut in small pieces
  • 1 teaspoon cinnamon
  • 1/2 tablespoon flour
  • 1/2 cup sugar
  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
  • 1 egg white, beaten
  • 1 teaspoon sugar

Directions

    In a medium frying pan over medium heat, melt butter and add apple pieces. Stir occasionally, until apples are tender. Add cinnamon and flour and stir until sauce thickens. Let rest while you begin to assemble pie pops.

    Pre-heat oven to 400 °F. Unroll pre-made pie crust and, using a small, round cookie cutter (smaller than 3 inches), cut out 12 circles. Place 6 rounds on baking sheet lined with parchment paper. Keeping the filling within 1/2 inch of the edge, add the mixture in the center of each round. Add 1 lollipop or craft stick into the filling.

    Top each round with a second round, covering the fruit mixture. Seal two rounds together using a fork. Brush with egg white wash and sprinkle with sugar.

    Bake 15 minutes, or until tops are golden brown. Remove from cookie sheet and place on cooling rack.
