Apple Cinnamon Pancakes

Make ordinary pancakes more nutritious by adding apples. These pancakes are great for a weekend family breakfast!

Ingredients

Pancakes

  • 2 medium red or green apples
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 3/4 cup buttermilk*
  • 1 egg
  • 2 tablespoons LAND O LAKES® Cinnamon Sugar Butter Spread

Topping

  • 2 tablespoons LAND O LAKES® Cinnamon Sugar Butter Spread
  • 1/2 cup maple-flavored syrup

Directions

    Heat lightly greased electric griddle to 350°F. Cut apples into quarters; core. Finely chop half of 1 apple. Thinly slice remaining apple; set aside.

    Combine flour, sugar and baking powder in medium bowl; stir until well mixed. Add all remaining pancake ingredients; beat at low speed until well mixed. Stir in chopped apple.

    Drop 1/4 cupfuls of batter onto griddle; spread to 4 inches. Cook until tops are bubbly (2 to 4 minutes). Turn pancakes; continue cooking until cooked through (1 to 2 minutes.)

    Meanwhile; melt 2 tablespoons Cinnamon Sugar Butter Spread in 12-inch nonstick skillet over medium heat; add sliced apples. Cook, stirring occasionally, until apples are crisply tender (8 to 10 minutes). Remove from heat; stir in syrup. Serve topping over hot pancakes

    *Substitute 2 teaspoons vinegar or lemon juice and enough milk to equal 3/4 cup; let stand 5 minutes.
