Expert Tips

Use the cereal in your cupboard to add flavor and texture as well as whole-grain goodness to this terrific bread that's great any time of day.

Whole Grain Serving: 1/2

Directions

  • 1 Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening or cooking spray. Place cereal in resealable food-storage plastic bag or between sheets of waxed paper; crush with rolling pin. In large bowl, mix crushed cereal (about 3/4 cup), apple juice and vanilla; let stand 10 minutes.
  • 2 Stir remaining ingredients except apple into cereal mixture. Stir in apple. Pour into pan.
  • 3 Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack. Cool completely before slicing, at least 1 hour.
