Ingredients

To prepare the chips:

  • 5 medium-sized apples
  • 1/4 teaspoon salt
  • 2 tablespoons cinnamon

To prepare the cheese

  • 1 liter whole milk
  • 3 tablespoons lemon juice
  • Salt or sugar, to taste

Directions

    To prepare the chips: Preheat the oven to 200°F.

    Wash the apples and remove the core with an apple corer or knife. Cut in thin slices.

    Arrange the slices on a baking sheet. Sprinkle with salt and cinnamon. Bake for 3-4 hours, until the slices have curled slightly, and the skin is wrinkly.

    To prepare the cheese: In a saucepan, combine the milk and lemon juice. Let rest for a few minutes before bringing to a boil over low heat. Little by little you will see the milk separate into curds and whey.

    Use a colander to strain out the whey. Some people prefer to let the milk and lemon juice mixture rest for 16 hours before heating, but I prefer to heat the mix immediately and it tastes just as good.

    Sprinkle with salt or sugar for salty or sweet chips.

    Serve with whey cheese as a dipping sauce.
