Directions

  • 1 To prepare the chips: Preheat the oven to 200°F.
  • 2 Wash the apples and remove the core with an apple corer or knife. Cut in thin slices.
  • 3 Arrange the slices on a baking sheet. Sprinkle with salt and cinnamon. Bake for 3-4 hours, until the slices have curled slightly, and the skin is wrinkly.
  • 4 To prepare the cheese: In a saucepan, combine the milk and lemon juice. Let rest for a few minutes before bringing to a boil over low heat. Little by little you will see the milk separate into curds and whey.
  • 5 Use a colander to strain out the whey. Some people prefer to let the milk and lemon juice mixture rest for 16 hours before heating, but I prefer to heat the mix immediately and it tastes just as good.
  • 6 Sprinkle with salt or sugar for salty or sweet chips.
  • 7 Serve with whey cheese as a dipping sauce.
