Ingredients

Fritters

  • 2 cans (15.8 oz each) black-eyed peas, drained, rinsed and patted dry
  • 1/3 cup finely chopped white onion
  • 1 clove garlic, finely chopped
  • 1 cup Progresso™ Panko Italian style crispy bread crumbs
  • 1 egg
  • 2 cups vegetable oil

Sauce

  • 1 tablespoon olive oil
  • 2 tablespoons finely chopped green onions (2 medium)
  • 1 clove garlic, finely chopped
  • 2 tablespoons finely chopped fresh Italian (flat-leaf) parsley
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted tomatoes, undrained
  • 1/2 teaspoon salt

Directions

    In food processor, place black-eyed peas. Cover; process to make a thick puree. In medium bowl, mix peas, white onion, 1 clove garlic, the bread crumbs and egg until well combined. Cover; refrigerate 30 to 40 minutes.

    To make Sauce, in 10-inch skillet, heat 1 tablespoon olive oil over medium-high heat. Add green onions and 1 clove garlic; cook 1 to 2 minutes, stirring frequently. Stir in parsley; cook 1 minute. Add tomatoes and salt; cook 3 to 5 minutes, stirring occasionally, until some of liquid evaporates. Cover to keep warm.

    In 1-quart saucepan, heat 2 cups vegetable oil over medium heat to 375°F. Shape black-eyed pea mixture into 1 1/2-inch balls; then shape balls into 2-inch patties, about 1/2 inch thick.

    Fry in batches of 4 patties 1 to 2 minutes, using slotted spoon to add and remove patties (no need to turn). Drain on paper towels. Serve warm with sauce.

Expert Tips

  • tip 1
    Make sure the oil is heated to the correct temperature. As a test, fry 1 patty. If it doesn't hold its consistency, stir 1/4 cup additional bread crumbs into the mixture before forming the remaining patties. Patties will be tender; for best results, use a slotted spoon during frying.

    For an impressive garnish, cut additional green onions lengthwise into stick shapes. Decorate each patty with a green onion stick.

    The texture of the patty mix is dry, like any other vegetarian patty.
