Chill the glasses beforehand.

Directions

  • 1 Remove leaves from strawberries and wash well.
  • 2 Place strawberries in food processor to purée. Strain purée through sieve (to remove seeds).
  • 3 In a small saucepot, place a cup of water, and a cup and a half of sugar over medium heat until completely dissolved. Remove from heat; let cool.
  • 4 Add simple syrup to the strawberry purée with orange liqueur; let chill in refrigerator for 20 minutes.
  • 5 Rub rim of previously chilled glasses with the orange strips, pressing down to let flavor permeate.
  • 6 Add two tablespoons of strawberry purée to each; then pour in champagne (or wine).
  • 7 Serve chilled with strip of orange zest.
  • 8 Cheers!
