Expert Tips

To cook the amaranth, place 1/3 cup of the cereal in a small pot with 1 cup of water. Bring to a boil over medium heat. Lower the heat and stir occasionally, for about 20 minutes until tender.

Directions

  • 1 Preheat the oven to 350°F.
  • 2 Season the fish with salt, pepper and lemon juice. Cover with a thin layer of cooked amaranth, pressing down firmly so it doesn't come off, and place the fillets on a baking dish
  • 3 Bake for 10 minutes. Be careful, don't let your fillets overcook.
  • 4 In the meantime, heat the oil in a skillet over medium heat. Add the onions and garlic, and sauté for 2 minutes. Incorporate the peppers and, after 2 minutes, add the broccoli. Season with soy sauce, salt and pepper. Add 1 tablespoon of chopped parsley.
  • 5 Serve the vegetables on two plates. On the side, place the fish fillets in their juice. If you wish, garnish with a parsley sprig and serve immediately.
