Expert Tips

Work quickly when you’re putting them together. This dough requires little handling.

This recipe includes some of the tastiest and most versatile foods. Both coconut and almonds are rich to add to the recipe. And just wait until you put them in the oven… great aroma! Everyone in your home will be counting the minutes. You can treat yourself to these cookies stuffed with sweet dates either before you start or after you’ve finished your exercise routine. You can enjoy them with your favorite tea. No matter how you have them, their soft texture makes them a melt-in-your-mouth treat.

Directions

  • 1 In bowl, combine all dry ingredients: almond flour, Himalayan salt, linseed powder and sugar.
  • 2 Add coconut butter, almond milk and pure coconut extract to mixture.
  • 3 Divide dough into 2 or 3 balls, cover and place in the freezer for 20 minutes.
  • 4 Cut dates into small pieces.
  • 5 Have a non-stick baking sheet ready.
  • 6 Preheat the oven to 350°F.
  • 7 Take dough out of freezer.
  • 8 The process of putting them together is similar to that of empanadas. Divide dough into 12 portions. Make a ball with the first portion, flatten and shape into a disk. Add dates and coconut to the center. Then press edges together to form a half-moon shape. Make sure dates and coconut are well covered. Repeat process with remaining portions.
  • 9 Place the half-moons on the baking sheet. Bake for 12 minutes.
