4th of July Gelatin Cake

We look forward to the 4th of July in my house. It usually means a day of family and friends gathering together to enjoy some of the most precious moments of the summer. Topped off with an evening of a decorated light filled sky. We have always spent the day at my aunt’s house barbecuing and swimming. The kids play in the water all day waiting for the night to approach with great anticipation. During the day the food is endless. We serve everything from grilled meats to gorgeous salads and a bounty of desserts. My family always makes sure to have a 4th of July Gelatin Cake on the table. It is super easy to make and is cool to the mouth on a hot day. This cake is served chilled and it holds all the patriotic colors of the holiday. It stands tall in all the glory of red white and blue. Enjoy!

Ingredients

  • 1 white cake mix
  • 1 (6 oz) box of cherry gelatin
  • 1 (6 oz) box of blue raspberry gelatin
  • 2 cups boiling hot water
  • 1 pint fresh blueberries
  • 1 basket fresh strawberries
  • 24 ounces whipped cream in a tub, or white frosting

Directions

    Bake cake according to the box in two 8-inch round pans.

    While cakes are baking, boil water. Then place the cherry gelatin in one bowl and the blue raspberry gelatin in another bowl. Once water is boiled, add 1 cup of water into each bowl. Stir to dissolve gelatin. Set each bowl to the side.

    Remove cakes from oven and poke about twenty holes into each cake with the toothpick. Then slowly pour 1/2 cup of the liquid gelatin mixture over each cake. One cake gets poured with red, and the other gets poured with blue. If you would like the entire cake to be the color of the gelatin, then pour the whole cup in.

    Place cakes in the fridge to set for 2 hours.

    Remove cakes from fridge, and then carefully remove cakes from pan. Place one of the cake layers on a plate.

    Take a big scoop of whipped cream or white frosting and frost the top of the first layer of cake, then top with blueberries.

    Add the second layer of cake and frost the entire cake. Top with strawberries.

    Place back in the fridge to chill for at least an hour.

    Bake the cakes with a piece of wax paper at the bottom of pan, so it’s easier to remove them from the pans.
