Tomato Soup with Bacon and Yogurt

This tomato soup is very tasty, easy to make and you can include it in your diet plan. This time, I’m making my tomato soup recipe with a wonderful ingredient: yogurt. By mixing these ingredients, I’ve created a delicious recipe that I will share with you.

Ingredients

  • 4 low fat bacon strips
  • 2 tablespoons olive oil
  • 1 large can (28 oz) whole peeled tomatoes, in their juice
  • 1 large diced yellow onion
  • 1 tablespoon all-purpose flour
  • 1 tablespoon fresh thyme
  • 1/2 teaspoon sweet smoked paprika powder
  • 2 cups chicken broth
  • 9 ounces natural or Greek yogurt
  • Kosher salt and pepper to taste
  • 1 medium diced tomato (seeded)

Directions

    Place the bacon on a small baking sheet and put it in the oven at 400°F, for about 15 minutes or until crunchy. Place on paper towels to absorb the excess fat, carefully.

    In a medium pot, heat two tablespoons of olive oil over medium to medium high heat and cook onion until its soft and golden brown, for about 4 minutes. Add fresh thyme, paprika powder and flour, and stir constantly for one minute.

    Place tomatoes with their juice in the blender or food processor and strain the mixture.

    Add the tomato mixture to the pot with the sautéed ingredients along with the two cups of chicken broth. Season with salt and pepper to taste and bring to a boil. Lower the heat to the lowest possible setting. Cover the pot with the lid, but not completely, and let cook over low heat for 20 minutes. Stir every now and then. Once the 20 minutes are up, add 6 ounces of yogurt stir vigorously and turn off the heat.

    In a small container, place the remaining 3 oz of yogurt and diced tomato. Chop up the bacon.

    Serve the soup hot and place a tablespoon of the yogurt and tomato mixture over it. Sprinkle with pieces of bacon. !Buen apetito!

    If you like your soup cold, let it rest once it’s ready, cover with plastic wrap and let cool in the refrigerator until ready to serve. It’s just as delicious, like Gazpacho!
