Erica Dinho

I was born and raised in Medellin - Colombia, and there I lived happily with my family and friends for many years. After high school, I studied Tourism, Hotel Management, and Marketing.

I came to the Northeastern United States one summer to spend some time with family, and never left! I met a man, settled down, had a family, and here I happily remain.

Being away from home and having a desire to stay connected with my culture and food, in 2009 I created mycolombianrecipes.com, a recipe blog consisting of Colombian recipes and many other great tasting dishes from around the world. Sharing Colombian food and culture with people from other countries brings me great pleasure and allows me to stay connected to my heritage.

Mango Limeade

Mango is one of my favorite fruits. I love eating it alone and even cooking with mango: they go great with salads, sauces, seafood dishes, desserts and, obviously, in cocktails and drinks.

A cold glass of limeade always makes my summer, and I love to play around with its ingredients and adding different fruits to the traditional recipe. This time I bring you a refreshing mango limeade with fresh mango juice, lime, sugar and ice.

This recipe is not only quick but also quite refreshing. The combination of fruits and its sweet and sour flavors will have you enjoying this limeade all summer long!

Kid friendly Pineapple Sangria

Sangria is a refreshing alcoholic beverage traditional in Spain and generally prepared with wine, fresh fruit, liquor and ice cubes. It?s usually served in a see-through jar to display the fruits used.

Sangria is typically made with red wine and that?s where it gets its name (in Spanish, sangre means blood, resembling the color of the drink). You can also prepare it with white wine, called white sangria.

Today I?d like to share with you an alcohol-free sangria recipe that?s suitable for adults and kids alike. It?s a great option to serve with a brunch or a festive lunch. The presentation of your sangria is essential, especially if you have little kids: the colorful fruits will appeal to their senses and they?ll want a sip for sure!

This recipe for Coconut Bread Fish Tacos with Tomatillo and Avocado Sauce is simple to make, and ideal for a quick and tasty dinner any day of the week. Taking little time to bake, coat fish with bread crumbs and coconut, and then drizzle with the tasty and creamy tomatillo sauce and avocado.
